What actually changes
CR2 and DNG are not the same picture in two wrappers.
The sensor data is moved into DNG without being demosaiced, so nothing about the image is rendered or lost. What changes is the container: DNG is publicly documented, carries a standard colour matrix and stores edits internally instead of in a sidecar.
Worth knowing first
Canon-specific maker notes and Digital Photo Professional recipes do not survive intact. If your workflow relies on Canon's own software reading its Picture Style or Dust Delete Data, keep the CR2 files alongside the DNGs.

Does DNG lose any image quality?
No, in the default lossless mode. The raw sensor values are stored unchanged, just wrapped differently.
Are DNGs smaller than CR2s?
Usually slightly, because DNG applies lossless compression more consistently. The difference is percentage points, not multiples.
