A DNG from a phone camera app or an Adobe conversion needs to become a normal shareable photo.
The DNG's raw data is demosaiced and rendered to JPEG. Because DNG is an openly documented format, the conversion is more predictable than with proprietary raws, and the tone curve and colour matrix stored in the file are actually usable.
Not all DNGs contain raw mosaic data. Some are linear DNGs, and some phone DNGs are already partly processed, so the amount of editing latitude you are giving up varies a lot between sources.
It is a standardised raw container. Adobe's DNG converter can wrap most camera raws in it, and some cameras and phones write it natively.
Longevity and tool support. DNG is documented and read by everything, where proprietary raw formats depend on the vendor.

JPEG Image is lossy, so the quality control decides the trade between size and fidelity.
Converted and deleted the moment it finishes. Never written to permanent storage.
