What actually changes
DOCX and ODT are not the same picture in two wrappers.
The OOXML document is rewritten as OpenDocument, a different XML schema with a very similar underlying model. Text, styles, tables and images map across with high fidelity.
Worth knowing first
The models are similar but not identical, and the differences show up in the corners: text boxes, content controls, and complex numbering restarts. Numbered headings are the classic casualty, where the list restarts in the wrong place after conversion.
