What actually changes
JPG and DOCX are not the same picture in two wrappers.
OCR reads the characters and they are written into a DOCX as flowing paragraphs. The result is editable in Word, Google Docs or LibreOffice.
Worth knowing first
OCR errors that survive into a Word file are more dangerous than in plain text, because the document looks finished. Numbers are the usual casualty: a misread digit in an invoice total is invisible to a spellchecker and to a reader skimming it.
