What actually changes
EPS and PDF are not the same picture in two wrappers.
The PostScript program is converted into PDF page content. Both formats descend from the same imaging model, so paths, fills and text carry over cleanly and the output stays vector.
Worth knowing first
EPS has no page size of its own, only a bounding box. If that box was recorded wrongly by whatever produced the file, the PDF will be cropped or surrounded by empty space, and no amount of re-converting fixes a bad bounding box.

Is anything lost?
Rarely. PDF is a superset of the PostScript imaging model, so this is one of the cleaner conversions in print workflows.
Will the fonts be embedded?
Only if they were embedded in the EPS. Otherwise the interpreter substitutes, and the spacing changes.
