What actually changes
JPG and AVIF are not the same picture in two wrappers.
The JPEG is decoded and re-encoded as AV1 intra. For photographic content AVIF commonly reaches the same perceived quality at 40 to 50 percent of the JPEG's size.
Worth knowing first
Lossy input, lossy output. AVIF is efficient enough that it will happily spend bytes preserving the JPEG's own blocking artefacts. Encode from the original capture where one still exists, not from the web-sized JPEG.

Will the AVIF look identical to the JPEG?
At a sensible quality setting, yes on screen. AVIF handles smooth gradients better than JPEG, so skies often look cleaner than the source.
Do I still need JPEG fallbacks?
For browsers, no. For email clients, scrapers, and older desktop software, yes.
