    What actually changes

    MP4 and MOV are not the same picture in two wrappers.

    The same H.264 or HEVC video and AAC audio streams are rewrapped in a QuickTime container. When no re-encode is needed the operation is near instant and lossless.

    Worth knowing first

    Rewrapping to MOV does not make the footage editing-friendly. Long-GOP H.264 is painful to scrub and cut regardless of the container; if that is the actual problem, transcode to an intra-frame codec like ProRes instead of just changing the extension.

    No. The container does not affect quality. What matters is the codec and the bitrate inside it.
