    What actually changes

    MPEG-1 or MPEG-2 video is re-encoded to H.264, typically cutting the file to a quarter of its size at the same visual quality, and the MP2 or AC-3 audio becomes AAC.

    Worth knowing first

    MPEG-2 from DVD sources is interlaced, and if you convert without deinterlacing, every frame with motion in it shows comb-shaped tearing on a progressive screen. That artefact is introduced by skipping a step, not by the codec.
