What actually changes
SVG and EPS are not the same picture in two wrappers.
SVG paths are written as PostScript drawing operators. The output stays vector and prints at any size.
Worth knowing first
EPS has no native transparency. Opacity, blend modes and drop shadows in the SVG must be flattened or rasterised on the way out, and a logo with a soft shadow can arrive with a visible white box behind it in the print file.

Should I outline the text?
Yes, unless you can supply the font. Outlined text removes every font substitution risk at the printer.
Would a PDF be acceptable instead?
Almost always, and it is a better format in every respect. Ask, because many suppliers say EPS out of habit.
